Rinse 1 vol. of lentils, put in a saucepan of cold water, bring to the boil for 1 minute then drain (this step helps ensure good digestion of the lentils). Continue cooking in 1 vol. of water over low heat for 15 to 20 min. Possibility of adding herbs or kombu seaweed to the cooking water. Eat hot as an accompaniment or cold in a salad.
