Fenugreek (Trigonella foenum-graecum) is a legume that has been cultivated since antiquity in India, the Middle East, and around the Mediterranean. Its small, angular, golden-brown seeds are simultaneously a spice, a culinary ingredient, and a seed for sprouting.
Botanical overview
Trigonella foenum-graecum is an annual plant in the Fabaceae family, 30 to 60 cm tall, with leaves composed of three leaflets and yellowish-white flowers. Its elongated pods contain 10 to 20 hard, highly aromatic seeds.
The seeds contain fiber, proteins, saponins, flavonoids, and trigonelline, an alkaloid responsible for their characteristic aroma.
Aromatic and flavor profile
Raw fenugreek seeds have a bitter and aromatic flavor. Lightly dry-roasted, they develop notes of caramel and maple syrup. Their powerful fragrance is characteristic of curry and ras el hanout.
How to use
- As a decoction: 1 to 2 teaspoons of seeds (3 to 5 g) per 200 ml of cold water, brought to a boil for 5 minutes, then strained. A maximum of 1 to 2 cups per day
- In cooking: dry-fry the seeds for a few seconds before adding them to curries, ras el hanout, breads, legumes, and chutneys
- For sprouting: soak the seeds for 8 hours, rinse, then leave to sprout for 3 to 4 days in a jar or sprouter. Consume the sprouts raw in salads
