Why is lacto-fermented cabbage beneficial?
Lacto-fermentation of cabbage by lactic acid bacteria naturally present on the leaves (primarily Lactobacillus plantarum and Leuconostoc mesenteroides) produces L(+) lactic acid, which preserves the cabbage without pasteurization and generates several nutritional benefits: an increase in vitamin C content (fermented cabbage can contain more than raw cabbage), the synthesis of B vitamins (B1, B2, B6, B12) by the bacteria, and a supply of live natural probiotics that support the gut microbiome. Natural sauerkraut (unpasteurized or pasteurized at low temperatures) retains more live bacteria than cooked sauerkraut.

How to prepare Organic Sauerkraut?
Drain and rinse if desired (reduces salt content). Heat over very low heat to preserve the live bacteria. Serve as a side dish with white meats, sausages, smoked fish, or as a vegetarian meal with potatoes. Can be added to casseroles, soups, or slow-cooked dishes.
