Agar-agar, or Kanten, is made from a mixture of algae and is available in powder or stick form. Its benefits are numerous: it is low in calories (only 7kcal per serving), dissolves very easily, and has a completely neutral taste.
How to use Organic Agar Agar?
Agar-agar is suitable for all preparations requiring the use of a gelling agent, both savory and sweet: jellies, jams, desserts, aspics, etc. The gelling capacity depends on the acidity: acidic preparations will need a little more Agar-Agar.
Do not combine it with chocolate or kiwi, as these neutralize its gelling effect.
Use: for jam: 4g of powdered Agar-Agar for 1kg of cleaned fruit or 1l of fruit juice. Add the fruit to the hot syrup (water + sweetener) and bring to a boil.
When the jam begins to thicken, add the agar-agar dissolved in a tablespoon of water, boil for a few minutes, and turn off the heat. This natural gelling agent sets quickly as soon as the temperature drops below 40°C.
