What is xylitol?

Xylitol (E967) is a polyol, or sugar alcohol, naturally present in birch bark and certain fruits. Its sweetening power is close to that of white sugar, with 2.4 kcal/g compared to 4 kcal/g. Its glycemic index is 7, compared to 65 for sucrose.

Consumption of foods containing xylitol instead of sugar induces a lower blood glucose rise after meals than foods containing sugar. This effect is achieved when xylitol replaces at least 30% of the sugar in foods or drinks (authorized claim, EU regulation 432/2012).

How to use xylitol?

A dose-for-dose sugar substitute in hot drinks, yogurts, stewed fruits, and classic pastries: 1 spoonful of xylitol replaces 1 spoonful of sugar. It does not caramelize like sucrose. Store in a dry place, away from moisture.
