What is crystalline xylitol?

Xylitol (E967) is a polyol, or sugar alcohol, found naturally in birch bark and certain fruits. Its crystalline grain size, slightly coarser than fine powder, makes it easy to measure. It dissolves well in hot drinks. Its glycemic index is 7, compared to 65 for white sugar.

Consumption of foods containing xylitol instead of sugar induces a lower blood glucose rise after their consumption compared to sugar-containing foods. This effect is achieved when xylitol replaces at least 30% of the sugar in foods or drinks (authorized claim, EU Regulation 432/2012).

How to use xylitol?

A one-to-one substitute for sugar in hot drinks, pastries, jams, and yogurts. It does not caramelize like sucrose. Xylitol is hygroscopic: keep it in an airtight container in a dry place.
