Some notions of botany
Native to southern Europe and western Asia, clary sage is a biennial or perennial herbaceous plant, very fragrant and very hairy, which can reach 1.60 meters in height. Easy to cultivate, it grows preferably on limestone, well-drained and sunny soils. Its erect and branched quadrangular stems are very woody. Its large oval leaves are opposite and its bell-shaped pale blue or lilac flowers are distributed on the main stem and on secondary branches. Edible, just like its leaves, they give off a powerful scent somewhat reminiscent of passion fruit.
A little history…
In Latin, “salvia” means to heal or save.
According to a legend from ancient Greece, Zeus was suckled by the goat Amalthea near a sage bush. These latter would have given its milk divine power.
What we call in Roman mythology the “plant of Jupiter” or the “sacred herb” has always been endowed with extraordinary powers.
In many ancient cultures (Etruscan, Greek and Roman) it had, among other things, virtues of protection and purification. She was also said to be capable of developing maturity and spiritual wisdom.
In the Middle Ages, in Europe, it was cultivated in the gardens of monasteries and used by monks to treat many ailments, because it was said to be “good for everything”.
A typical “priest’s garden” plant, clary sage has been cultivated for centuries.
Its cultivation was also recommended in the royal domains by Charlemagne in the De Villis capitulary (late 8th and early 9th centuries)
