Native to southern India and Sri Lanka, lemongrass, nicknamed "Indian verbena," is a perennial herb due to its rhizomes. It also grows in other tropical regions such as the West Indies and Africa. Its long, narrow, linear leaves with sharp, blue-green edges release a strong aromatic odor when crushed, similar to that of lemon. The stem of lemongrass is hollow and bulbous. Its base is traditionally used in the composition of a very refreshing drink, and adds an exotic, fresh, green, and lemony note to certain Southeast Asian dishes and desserts.

A little history…

In ancient times, the Egyptians praised its medicinal properties. The Greeks and Romans used a species very similar to Java citronella, called "Indian spikenard," whose fresh and slightly spicy notes were part of the composition of the famous "royal perfume" of the Parthians, celebrated by Pliny the Elder. Highly prized since the 18th century, it is still appreciated for its taste and its very distinctive odor.
