Buckwheat crozets from the Markal brand are delicate artisanal pasta made from buckwheat flour (20%). Buckwheat is an ancient, gluten-free cereal, known for its rustic flavor and nutritional value. Rich in dietary fiber, plant proteins and minerals (such as magnesium and zinc), buckwheat crozets offer a tasty and nutritious alternative to classic pasta.
History:
Initially, crozets were small pieces of dough, cut with a knife, and which the Dauphinoises threw into their soup. They took great care to draw a small cross on each of these pieces, hence the name “crozet”. Of Piedmontese origin, crozets constituted under the old regime the essential food of the miners of the Allevard region. Each valley had original shapes, flavors and recipes accompanied by seasonal products.
