Spearmint (Mentha spicata), also known as green mint, is the mint used in mint tea and aromatic gardens. Less potent than peppermint, it offers a rounder, slightly sweeter freshness.
Botanical overview
Mentha spicata is a perennial plant of the Lamiaceae family that spreads by stolons and forms tufts 30 to 60 cm tall. Its lanceolate, wrinkled leaves are bright green and slightly textured. The small pink or lilac flowers are grouped in spikes from July to September.
Its essential oil is dominated by carvone (50 to 80%), with limonene and very little menthol. It also contains flavonoids (luteolin, apigenin) and phenolic acids (rosmarinic acid, caffeic acid).
Aromatic and flavor profile
Spearmint infusion produces a clear, pale yellow to green liquor. Its aroma is fresh, soft, and slightly sweet, with notes of carvone similar to those of spearmint chewing gum. On the palate, the freshness is pleasant and less sharp than that of peppermint.
How to prepare the infusion
- Quantity: 1 to 2 teaspoons of dried mint (approximately 1.5 to 3 g) per cup
- Water: simmering, approximately 90°C
- Infusion: 5 to 8 minutes, covered
- Strain: and enjoy lukewarm or hot
- Frequency: 2 to 3 cups per day, hot or cold. For iced tea, let a slightly more concentrated infusion cool and serve over ice cubes with a squeeze of lemon
