Common valerian (Valeriana officinalis) is a tall plant found in damp meadows and along riverbanks in Europe. Its dried roots, which have a very distinct earthy and musky scent, are prepared as an infusion or decoction in the herbalist tradition.
Botanical presentation
Valeriana officinalis is a perennial plant of the Valerianaceae family that can reach 1 to 1.5 meters in height. Its upright stems bear pinnate leaves and corymbs of small, highly fragrant pink to white flowers from June to August. The root, a creeping rhizome, is harvested in autumn and then dried.
The roots contain valerenic acids, valepotriates, flavonoids, essential oils (borneol), and amino acids. The strong smell of the dried root is due to the release of valerianic acid.
Aromatic and taste profile
Valerian root infusion produces a light brown to amber-colored liquor. Its aroma is powerful, earthy, and musky; its flavor is bitter and slightly acrid. It is softened with a drizzle of honey or by combining it with lemon balm, lemon verbena, or lavender.

- Cooking: bring to a boil for 3 to 4 minutes, then remove from heat
- Duration: 5 additional minutes of infusion, then strain

FAQ
Is the Herbiers de France valerian root certified organic?
Yes, this valerian root is certified organic, without pesticides or synthetic chemical inputs.
Is the strong smell of valerian normal?
Yes. The dried root naturally gives off a strong, earthy, and musky smell due to valerianic acid and sulfur compounds. It fades in the strained drink.
Why are cats attracted to valerian?
Actinidine, an alkaloid in the root, has an effect on cats similar to the nepetalactone in catnip (Nepeta cataria). Keep the bag out of their reach.
Which plants can be used to soften it?
Lemon balm, lemon verbena, and lavender round out the taste. Always respect the precautions specific to each plant.
