Fresh salad with quinoa, chickpeas and Chia seeds

Ingredients for 4 persons):


Preparation time: 30 minutes

Cooking time: 20 minutes

Preparation of fresh Quinoa salad:

  1. Cook the quinoa (20 minutes):
    • Rinse the quinoa trio with cold water.
    • In a saucepan, bring 500ml of salted water to the boil.
    • Add the quinoa and cook over low heat for about 15 minutes, until the grains are tender.
    • Drain and let cool.
  2. Prepare the vegetables (10 minutes):
    • Peel and finely chop the red onions.
    • Wash and chop the flat-leaf parsley.
    • Wash and cut the radishes into slices.
    • Drain and rinse the chickpeas.
  3. Assemble the salad (5 minutes):
    • In a large salad bowl, combine the cooled quinoa, onions, parsley, radishes and chickpeas.
    • Add the sweet corn and chia seeds.
    • Pour the tomato sauce with Provençal herbs and mix gently.
    • Season with fine salt and freshly ground black pepper.
  4. Serve:
    • Serve the fresh salad in deep plates.
    • Drizzle with a drizzle of organic olive oil.
    • Enjoy fresh, as a starter or main course.
