Lentinan is a (1,3/1,6) beta-glucan specific to Shiitake, considered one of the most studied immunomodulatory polysaccharides in mycotherapy and pharmacology. It interacts with Dectin-1 receptors on immune cells (macrophages, NK cells, T lymphocytes) and modulates the innate and adaptive immune response. These properties relate to traditional use: there are no official EFSA health claims for Shiitake.

Eritadenine and lipid metabolism

Eritadenine is a nucleoside unique to Shiitake. Animal and human studies have documented its action on lipid metabolism, particularly on blood cholesterol levels. Its mechanism involves the partial inhibition of BHMT (betaine-homocysteine S-methyltransferase), thereby modulating homocysteine and lipid metabolism.
