This small red pigment takes its name from the tomato, Lycopersicon Esculentum, from which it is often extracted and which is found in large quantities. It can also be found in watermelon, red fruits, and grapefruit. Lycopene does not decrease during cooking, unlike other nutrients that are more sensitive to heat. On the contrary, cooking increases the bioavailable amount of lycopene.
