Tapioca Verrine with Coconut Milk and Pineapple

- 30g organic Priméal tapioca
- 200ml organic Terra Sana coconut milk
- 1 tablespoon France Tonic Nature chia seeds
- 1 teaspoon Herbes et Traditions lemon essential oil
- 1/2 fresh pineapple, diced
- Zest of one lemon
- 1 tablespoon Comptoirs et Compagnies powdered coconut sugar

Instructions for your Exotic Tapioca, Coconut Milk and Pineapple Verrine:
- In a saucepan, bring the coconut milk to a boil.
- Add the tapioca, then reduce heat and let simmer for 10 minutes, stirring occasionally, until the tapioca is translucent.
- Remove from heat, add the chia seeds, lemon essential oil, and powdered coconut sugar. Mix well until the sugar has completely dissolved.
- Distribute the coconut milk tapioca into a verrine.
- Top with the diced pineapple and lemon zest.
- Refrigerate for at least 2 hours before serving.
